The history of this hotel is linked to the family Gamper who has been dedicated to this activity for over 70 years: from the initiator Matthias, to his eldest son Adolf who made it into a modern and far-sighted business, passing through the fire of the then Schwarzer Adler, up to the reconstruction and management of the son Armin, to date, with the current “Active and family hotel Adlernest“Managed by the homonymous great grandson.

Mattihas Gamper and NEST gin

Returning to cooking, which in the valley is a “slow food presidium”, Rainer discovered his passion for cooking from an early age. After training in South Tyrol, he traveled the world, bringing with him, in addition to the interpersonal, a world of unique taste. «For me the most important thing is still“ preserving the old ”- explains Rainer – those tasty and thick recipes from my grandmother, the methods of cooking and preserving the products. I like to interpret classic dishes in a completely new way, adapting them in a colorful way with international flavors. The 100km rule applies strictly in my kitchen. 90% of the ingredients come from South Tyrol and above all from Val Senales ».

A deeply felt activity is that linked to the artisanal production of gin. “Tradition is not about preserving the ashes, but transmitting the flame” – specifies Matthias Gamper – just like the name of the distillery: Traditionalum = tradition. Together with Peter Paul we are committed to preserving the old recipes and making them presentable again. The ability of Peter, Latsch’s beverage trader and sommelier of fine liqueurs and my experience as a “host” (I like to call myself a virtuoso when it comes to gin) led to this idea: the first product, NEST Gin.
First just an idea in our head, then we met a partner and together with the master distiller Helmut Oberhofer of the Roner distillery, the idea was realized and brought from the paper to the bottle. The result is our NEST Gin, a real liquid gold, made for “gintleman” and “ginsters” in the city and of course for real rednecks in the mountains ».
